I will be grouping up both calibers and ammunition type according to their similarity:

1.Assault,Battle,Marksman & Sniper Rifles

2.Pistols/Sub Machineguns (SMGs)/Personal Defense Weapons (PDWs) & Shotguns

Will also put out the lingo of the ammo stats such as:
Penetration = PEN
Damage = DMG
Accuracy = ACC
Recoil = RCL
Durability Burn = DUR.BURN (Weapon Durability lowers from this)
Stack Per Slot = SPS (How many rounds a slot will take in your inventory/stash)
Some rounds will have more than 2 statistics whether it be positive or negative.

As possibly most of the ammunition may have been renamed to avoid possible copyright things from real world peoples, anyone can leave in the comments about the references for the firearm ammunition used in Zero Sievert.

All are tested with free aim and scoped in sights, do note all rounds are as they are in their original state in their JSON files (of course JSON editing is not that difficult regardless).
Assault,Battle,Designated Marksman & Sniper Rifle Ammunition
Standard Issue Rounds (All Rounder, Clear Bullet Tip)
5.45x39mm PS
PEN: 25, DUR.BURN: 0.03, SPS: 150

5.56x45mm M855
PEN: 28, DUR.BURN: 0.031, SPS: 150

7.62x39mm PS
PEN: 31, DUR.BURN: 0.035, SPS: 120

9x39mm SP-5
PEN: 38, DUR.BURN: 0.06, SPS: 150

7.62x51mm M80
PEN: 40, DUR.BURN: 0.08, SPS: 120

7.62x54mmR PS
PEN: 32, DUR.BURN: 0.09, SPS: 50

12.7x55mm PS
PEN: 45, DUR.BURN: 0.1, SPS: 40

Your fellow average infantryman issue ammunition with the exception of the 9x39mm 12.7x55mm, those are issued for the average special operators.Good penetration and reasonable weapon durability burn according to the weapon class

Hollow Point & FMJ Rounds (Unarmoured, Lined Marking)
5.45x39mm HP
PEN: 12, DMG: +20%, DUR.BURN: 0.02, SPS: 150

5.56x45mm HP
PEN: 13, DMG: +21%, DUR.BURN: 0.021, SPS: 150

7.62x39mm HP
PEN: 16, DMG: +16%, DUR.BURN: 0.025, SPS: 120

7.62x51mm FMJ
PEN: 29, DMG: +15%, DUR.BURN: 0.065, SPS: 120

12.7x55mm HP
PEN: 12, DMG: +30%, DUR.BURN: 0.08, SPS: 40

The war crime hunting rounds (except for the FMJ rounds), deals additional damage but at the cost of penetration compared to normal rounds so they are useful against unarmoured,Class 2 and maybe Class 3.
Although the 7.62x51mm FMJ and the 12.7x55mm HP can somewhat deal good amount of damage for it's type against up to Class 4 and slightly struggling against Class 5 and onwards

Subsonic Rounds (Unarmoured, 2 Dot Marking)
5.45x39mm Subsonic
PEN: 10, RCL: +25%, DUR.BURN: 0.017

5.56x45mm Subsonic
PEN: 11, DMG: -5%, RCL: -20%, DUR.BURN: 0.017

7.62x39mm Subsonic
PEN: 14, DMG: -7%, RCL: -22%, DUR.BURN: 0.018

Subsonic rounds are well subsonic, damage and penetration traded for better recoil control and lower weapon durability burn, oddly the Russian 9x39mm and 12.7x55mm should have been subsonic by nature.

Armour Piercing Rounds (Counters Body Armour, Black Tip Marking)
5.45x39mm BT
PEN: 40, DMG: -15%, RCL: +10%, DUR.BURN: 0.075

5.56x45mm M955
PEN: 55, DMG: -15%, RCL: +10%, DUR.BURN: 0.09

7.62x39mm BT
PEN: 58, DMG: -5%, ACC: +7%, RCL: +10%, DUR.BURN: 0.093

9x39mm BP
PEN: 57, DMG: -10%, RCL: +14%, DUR.BURN: 0.14

7.62x51mm M61
PEN: 65, DMG: -15%, RCL: +13%, DUR.BURN: 0.18

7.62x54mmR SNB
PEN: 58, DMG: -10%, ACC: +10%, RCL: +20%, DUR.BURN: 0.21

12.7x55mm BP
PEN: 71, RCL: +10%, DUR.BURN: 0.2

These are designed to punch through body armour, high penetration, higher recoil and weapon durability burn with lower damage, use these sparingly unless you have plenty of repair kits or materials to repair your firearms at the crafting bench with the workshop module
Anti Materiel Rifle Ammunition
Standard Ammunition
.50 BMG Standard
PEN: 70, DUR.BURN: 0.25
Pistol,SMG/PDW Ammunition & Shotgun Shells
Standard Issue (Clear Tip)
9x18mm PS
PEN:12, DUR.BURN: 0.01, SPS: 200

7.62x25mm FMJ
PEN: 13, DUR.BURN: 0.015, SPS: 120

9x19mm PSO (Might be NATO issued one or something similar)
PEN: 11, DUR.BURN: 0.013, SPS: 200

.357 (no weapons currently)

.45 ACP
PEN: 18, DUR.BURN: 0.03, SPS: 120

5.7x28mm R37 (Cannot seem to find the equivalent so comments are welcome)
PEN: 16, DUR.BURN: 0.014, SPS: 200

Probably your average issued ammunition for handhelds, all of them have their own statistics and durability burn in which should be very economical against up to Class 2 and struggling against Class 3

Hollow Point (Lined Marking)
None for now strangely

Subsonic,Double Dotted Marking
9x19mm Subsonic
PEN: 8, DMG: -10%, RCL: -30%, DUR.BURN: 0.009, SPS: 200

.45 ACP Subsonic (Technically .45ACPs are already subsonic)
PEN: 13, DMG: -5%, RCL: -25%, DUR.BURN: 0.01, SPS: 120

5.7x28mm Subsonic (possibly the SB193 Subsonic irl)
PEN: 11, DMG: -5%, RCL: -20%, DUR.BURN: 0.01, SPS: 200

Subsonic rounds for pistol/PDW caliber is well for subsonic usages, low damage, low recoil, low penetration plus improved recoil control. Do not bother using these against Class 3 and onwards.

Armour Piercing (Black Tip Marking)
9x18mm PBM
PEN: 25, DUR.BURN: 0.02, SPS: 200

7.62x25mm PST
PEN: 25, DUR.BURN: 0.03, SPS: 120

9x19mm AP (might be a 9x19mm +P or +P+,comments needed)
PEN: 30, DMG: -10%, ACC: +7%, RCL: +5%, DUR.BURN: 0.025, SPS: 200

.45 ACP AP
PEN: 35, DMG: -5%, RCL: +5%, DUR.BURN: 0.045, SPS: 120

5.7x28mm SS190 (Real world equivalent for some odd reason)
PEN: 33, DMG: -5%, DUR.BURN: 0.02, SPS: 200

Despite being pistol caliber AP rounds the Russian ones are somewhat a little bit better than their Standard Issue ones just with a little bit more durability burn and penetration but the NATO/Western rounds are equivalent to their Rifle rounds in terms of statistics, higher pen, higher weapon durability burn, higher recoil and lower damage. Then again since these are fired out of pistol caliber weapons their weapon durability burn is not much of an issue regardless if you are firing out of a pistol or a bullet hose PDW. Could hold up against Class 3 and finish off anything above Class 4 provided you know what you are doing.

12x70mm (12 Gauge) currently have 3 types of shells
Buckshot (Red Shell)
PEN: 7, DMG: +80%, ACC: -120%, DUR.BURN: 0.2, SPS: 40

Slug (Blue Shell)
PEN: 18, ACC: +25%, DUR.BURN: 0.2, SPS: 40

AP Slug (Blue Shell with Double Horizontal Lines)
PEN: 18, ACC: +25%, DUR.BURN: 0.2, SPS:40

(Here's to hoping for Dragon's Breath and Explosive Frag/Slug Rounds)
Just A Personal Preference
Rifle Ammo
I usually just hold on to the normal rounds, HP/FMJ and AP rounds. If I do pick up any Subsonic rounds just use them up to Class 2-3 Armour and any mutant/wildlife targets.

As of the 1.0.0 Full Release you will need AP rounds that can handle Class 6 enemies and some for Class 4 and under, so mix and match at your own risks

Pistol Caliber and Shotgun Shells
I just stick to AP rounds in general, for shotgun shells Slugs or AP Slugs are much more useful while for now Buckshot is only effective against unarmoured enemies like wolfs, boars and the mutants up close, however against Class 1 bandits is rather not completely suitable unless in a close and tight environment.
